It took me a while to add an entry to my food feat series because of work, vacation, and quarter-life crisis. I was supposed to bake strawberry Alaska but because of supply constraints I had to make do on a tropical fruit. It turned out really great! Because of the abundant harvest from my aunt’s backyard, I created the freshest mango filling. I intentionally reduced the sweetness of the meringue frosting because everyone in my family has become cautious of onset diabetes.
